From Basic To A Classic: The Evolution Of Avocado Toast

Sure, avocado toast is getting a bad rep from all of the Instagrammable toppings and brunching ladies who can’t help but snap 300 overhead shots before everyone is allowed to take a bite. But what’s not to love about arguably the most delicious *fruit* (yes, avocados are technically fruits), mashed with toppings and loaded on top of crispy toast? Instead of focusing on the “basic” nature of this food, let’s have a look at the remarkable evolution of avocado toast and just how wild this dish got since its start.

It all started with four triangles and some chili flakes…

Then people began to get fancy with more spices (like pepper), a squeeze of lemon, and some sprouts…

And then the most amazing thing happened — someone #PutAnEggOnIt.

Not just a poached egg, but all *kinds* of eggs…

Some even started topping it with meat!

And then things got even crazier. Cuisines adapted the avocado toast, like this Mexican style here…
